Abstract
This chapter presents another case of successful combination of authenticity and standardization. It provides an analysis of the symbolization of food in relation to cultural authenticity in the context of translocal production. Multi-methods analyses, applied to a case study, disclose how the ‘gastronationalism’ construct can augment understandings of the tensions in symbolic cultural production and authenticity. The Dongting Hunanese Restaurant, located in Guangzhou, presents evidence that food symbolization is a feasible mechanism to preserve the authenticity of translocal restaurants in a manner which meets the complex experiential and identity needs of local customers.
