Abstract
Successful dietary counseling requires a perspective and knowledge of current eating practices. This chapter looks closely at population trends related to the African American diet and make specific suggestions regarding alternative foods or preparation approaches that can make an impact on overall health. Knowing current population dietary trends and possible cooking practices can help form the nidus of a productive conversation that delves into actual individual cooking habits. The dangers of frying foods with a particular discussion of advanced glycation end-products (AGE’s), which are linked to a number of serious health issues, is discussed in detail. The importance of breakfast and the impact and origin of lactose intolerance in African Americans is also reviewed. Finally, sugar-sweetened beverages, their impact on obesity, and approaches to counseling is discussed.
