Abstract

Previous studies of electrophysiological responses to taste stimuli have revealed that taste cells at all levels of the nervous system are generally multisensitive, i.e. they respond to more than one of the four basic taste qualities (salty, sour, bitter and sweet). The study of the response profiles of taste cells, defined as their relative sensitivities across a variety of taste stimuli, and their organization has formed the basis for all major theories of taste coding. The careful examination of response profiles of taste cells, i.e. their extent and construction, is therefore of great import for our understanding of the operational principles of the gustatory system.
