Abstract

The requirement of vitamins for growth and development, as well as their central role in carcinogen metabolism, has called the attention of many investigators toward their potential involvement in tumor induction and growth. Vitamins A, C, and E have been most associated with cancer (Committee on Diet, Nutrition, and Cancer, 1982), and the consumption of foods rich in these nutrients has been encouraged in public information brochures by major cancer organizations (e.g., the American Institute for Cancer Research and the American Cancer Society), and most recently, The Surgeon General’s Report on Nutrition and Health (Nutrition Policy Board, 1988) and Diet and Health (National Research Council, 1989).
