Abstract

It is important to differentiate between USDA Meat and Poultry Grading and USDA Meat and Poultry Inspection. Meat and Poultry Grading are voluntary programs performed by the Agricultural Marketing Service of the USDA. These grading programs segment carcasses and/or meat products into smaller, more homogeneous groups based on factors that estimate taste appeal of meat cuts, consumer acceptance, processing characteristics, and lean meat yield. Contrarily, Meat and Poultry Inspection are mandatory systems overseeing the production of safe and wholesome meat and poultry products and are conducted by the Food Safety and Inspection Service of the USDA. Grading is paid for by the meat processor; on the other hand, Federal Meat and Poultry Inspection programs are paid for by the U.S. taxpayer.
