Abstract
The present debate on nutrition and health, is concerned with the reasons for a high incidence of heart disease in certain countries and not in others. This approach assumes that those countries with a low incidence have developed a food structure which is “better” than those with a high incidence and it is common practice to make recommendations based on the food intakes of the low incidence countries.
