Microbiological production of enzymes and their industrial applications

Abstract

Bacteria and other fungi are industrially cultivated in a variety of ways for the commercial production of some 25 enzymes utilized in many industries ranging from the conversion of starch to fermentable sugars, through chill-proofing of beer to bating of hides.
